To ensure my child with difficult tastes eats well, I use a portable burner to cook simple yet tasty meals. One dish that always goes over well is Cha Jang Myun, a popular Korean noodle dish similar to pizza in its appeal and a great way to sneak in vegetables.
Black Bean Sauce Noodles or Rice with Vegetables
Ingredients:
Noodles or Rice: Choose your child's favorite (spaghetti, ramen, jasmine rice, brown rice, hoto noodles etc.).
Vegetables: A mix of colorful veggies like carrots, broccoli, snap peas, radish, or corn.
Protein (optional): pork is recommended and add seafood to upgrade.
Black Bean Sauce: I use premade Wang's Black Bean sauce.
Instructions:
Cook the Noodles or Rice: Prepare according to the package instructions. Drain and set aside.
Cook the Vegetables and Protein:
Heat a large pan or wok over medium-high heat. Add a bit of oil.
Add the protein first (if using) and cook until done.
In the same pan, add the vegetables and stir-fry until they are nearly cooked.
Add Wang's black bean sauce over the mixture, and mix it in. Add to taste. I find that at least 2 big spoonfuls are needed.
Stir-fry for another 2-3 minutes until everything is well mixed.
Add sauce over the noodle or rice and SERVE.
You can garnish with chopped green onions or sesame seeds for extra flavor and texture.
